Cutting garlic scapes, the curly flower stems that grow on hardneck garlic, is essential for achieving a better garlic harvest. By removing the scapes early, energy is redirected into bulb development, resulting in larger garlic heads. Scapes should be cut when they curl, before they straighten, typically in late spring or early summer.

Garlic scapes are also edible and can be used in various recipes. They have a mild garlic flavor and work well in pestos, stir-fries, soups, and grilled dishes. Chopped scapes can be added raw to salads or sautéed for a subtle garlic twist in many meals.
